Chicken Enchiladas

I thought I would share this recipe. It's sooooo good and easy. I tweak it every time I make it but this is my latest version.
Kim’s Yummy Chicken Enchiladas
Ingredients

2 boxes of Hormel Natural Choice grilled chicken breast (if using fresh chicken cut 1 lb of grilled chicken into pieces)
1 pack of La Banderita fat free soft taco shells
½ cup of fat free refried beans
1 block of reduced fat cream cheese (no whipped or full fat because it changes the taste)
1 can of chopped green chilies
1 (15 oz) can of green enchilada sauce (Old El Paso is the best but not a lot of places carry it. Carlita’s is an alternative)
1 cup of reduced fat shredded cheddar cheese

Directions


· Preheat oven to 350. Spray a glass 13x9 pan with Pam
· Heat chicken, cream cheese, green chilies and beans together until everything is mixed well. Make sure to heat on really low so the cream cheese doesn’t get to runny. You just need to heat until everything is mixed
· Spoon mixture into shell and roll. Place seam side down
· Pour enchilada sauce over all the shells
· Sprinkle cheese over the top
· Bake for 20 min


Serve with sour cream, cilantro and black olives

Trying to get back into the groove

My goal is to get myself back into the groove of blogging and reading blogs. I love doing both and have put it on the back burner for a long time. The past 5 months have been nuts with trying to find a house, moving, unpacking, dieting, parenting, etc.... I honestly don't know how I could be a working Mom right now in my life and I give props to all those working Moms out there.Here is a list of some things that I want to do more of or things that I want to do

*Save for a good camera and start taking more pictures (I love photography just like most of my friends)
*Cook- I cook a lot but its always the same boring dinners. I want to be more creative and cook more from scratch
*Start gardening
*Plan my trip with my bff to celebrate 20+ years together
*Thrift store shop, antique shop and garage sale more
*Start selling more on Amazon and Ebay
*Work on Jake's baby book
*Try different restaurants
*Spend more time in the sun

That is just a small list... My list goes on and on. I will share more of my list next week.

MRI

Jake had his MRI and blood work done today. He is no stranger to anesthesia because he has an eye exam under anesthesia every three months but the medicine they used for this procedure was different. I was able to hold his until he fell asleep. It was so sad and scary to hold him while to went limp. I'm not sure if I will do that again.
Everything went well however we will not have results for 3-5 days. I feel very positive though. When Jake came too he was unusually crabby. He scared me because he was screaming and wouldn't hold still. The nurse said it was because while he was trying to wake up they were drawing a lot of blood for his genetic testing and not allowing him to peacefully wake up. After about 30 minutes he returned to his happy self and we were able to leave. I was able to snap a picture before he went to under. He is such a cute little boy.

New House!!

I just realized that I haven't blogged since April 8th. WOW!! I think that's the longest I've gone.

Well life has been crazy. We bought a new house and are all moved it. I forgot how much work moving is and with a baby it's even harder. I promise to start blogging again once life settles down a little. Here are some pictures of our new house.
