1 YEAR TODAY!!

I can't believe my little boy is one year old today. I just can't wrap my head around it. Where did all the time go?? It's been a FUN and exciting year. In his short year of life my little man has been through a lot but he is a strong little boy with so much life and energy. He is such a unique little boy with a HUGE personality.

This first year of your life has been the best year of my life I can't imagine my life without you in it. I feel God put me on this earth just for you and to be your Mom. I feel so fortunate to have been able to stay home with you this year and see you grow and learn. You are a funny little boy. You march at the beat of your own drum and that is just one of the things that I love about you. You lack of sight doesn't stop you from exploring and learning new things. You are very trusting. Sometimes a little two trusting. You love to play your little toy piano. You love all your light toys so much that you at times let them lay right on your face for long periods of time. The light draws you in. You also love to bounce. So much in fact that we can't get you to stop. You bounce when your in your crib, being held, sitting down, in your high chair.

You are 20.3 pounds and 29 inches long. You love to eat. You love mac and cheese, spaghetti, peas, beans... Pretty much everything but if it's hot even just a little you will spit it out. You like your food cold. Hmmm strange. You can hold your sippy cup really good now. I'm so proud of you.

You say Mama and Dada but you don't really know what you are saying yet. You just learned to clap and when I say YAY you start to. It's really cute. In the past month you learned to sit. Karla your therapist works with you a lot on crawling. You can get up on all 4's but just bounce.


Everything goes in your mouth. You have two teeth on the bottom, both fangs and the left top tooth. The right top tooth is close to coming through.
You're an easy baby... We are so lucky to have you. I just love every second I have with you.

Top Ten Tuesday

Top ten things that don't make sense to me....

  1. Moms without stretch marks
  2. Operation Repo (how can people think it's real)
  3. Accounting (It was the last class I needed to get my degree. Thank god I sat next to someone who understood it)
  4. Hate or ignorance (to me they go hand and hand)
  5. The cost of college
  6. Lost (It's my favorite show but every time I watch it I find myself saying...HUH. I think I will need to go back when it's over and watch it again. Maybe then I will completely understand it)
  7. How anyone could think that Lima Beans are good. YUCK!!!
  8. The View (Elizabeth Hasselbeck makes me want to jump off a cliff)
  9. How some people don't think The Office is the funniest show ever made
  10. Step Aerobics (it's too confusing for me)

Check up

Jake had an exam under anesthesia yesterday with his eye surgeon. She checks him every 3 months to make sure that his eye disease isn't flaring up. Because FEVR is a chronic disorder it has to be closely monitored. They have to watch for bleeding and monitor the eye pressure levels. When FEVR is bad its really bad and when it's good it's really good. We are happy to report that at this time Jake FEVR is GOOD!! His surgeon is extremely happy with how his eyes are looking. We couldn't be happier. Jake turns 1 tomorrow and this is the BEST birthday present. She will check him again in 3 months and we hope to have great news at that time too.

I had to snap a photo of Jake in his hospital PJ's because he looked so cute. He has stickers on his face to mark left and right eye.

Mary's Birthday

Last week I went out to dinner with my girls for my bff Mary's birthday. We went to Loring Pasta Bar. I split spicy tuna rolls and bruschetta with Sonja. It was YUMMY. BBQ Chicken and Cheesy Potato Casserole

Today I wanted to share a yummy dish that I made last week. B LOVED it!! and I did as well.

1 Package of Simply Potatoes(diced potatoes with onion) these potatoes are in the refrigerator section
1 can (10 3/4 ounces) cream of chicken soup
3/4 cup sour cream
1/2 cup Shredded Cheddar Cheese
1/2 teaspoon seasoned salt
1 package (1 pound) frozen vegetables (I use the green bean, carrot, corn mix)
1 package (about 1 pound) package boneless skinless chicken breasts, cut into strips
1/3 cup barbecue sauce

Instructions:
1. Heat oven to 375°F. Spray 2 1/2 or 3-quart baking dish with nonstick cooking spray**. In medium bowl stir together Simply Potatoes, soup, sour cream, cheese and seasoned salt; mix well. Spread evenly into prepared pan. Cover with aluminum foil; bake 45 minutes.

2. Gently stir frozen vegetables into Simply Potatoes. In small bowl stir together chicken strips and barbecue sauce. Place chicken over Simply Potatoes mixture. Cover; bake 15 minutes. Uncover; continue baking 5 to 10 minutes or until Simply Potatoes are tender.

If you would like to cut the fat in half then use reduced fat products like reduced fat cheese and light sour cream.
