Tonights Dinner- Chicken and Mashed Potato Bake

I put together a recipe page on my blog and noticed that I cook a lot of chicken. All the recipes are chicken something or another. I decided that I need to start adding a bigger variety of recipes. Until I do I wanted to share yet another chicken recipe. I swear we eat more than just chicken and potatoes.

I made this tonight.

Chicken and Mashed Potato

What you will need


1lb of chicken breast cut up into cubes
1 can of cream of chicken soup
1/2 cup sour cream
2 cups of frozen vegetables thawed(I used a pea,carrot, corn and bean mix but you can use anything)
2 cups of milk
1/2 cup of cheese
Salt(as much or little as you like)
4 cups of mashed potatoes prepared

If you are watching calories you can use healthy request soup, reduced fat cheese, sour lean and skim milk. I never recommend using fat free products because I do not think they taste good. Reduced fat still tastes good and it cuts the calories.

Brown Chicken until no longer pink. I season my chicken with salt and pepper. Set aside














In a bowl mix together soup, chicken, veggies, sour cream, milk and salt. Grease pan and Spread evenly in a 13x9 baking dish.















Spread Mashed potatoes evenly on top of the chicken mixture.
















Bake for 30 min at 350. Remove and sprinkle shredded cheese on top and bake an additional 5 minutes of until the cheese is melted.

It's really fast and easy for a quick meal.

I love reading posts about recipes with pictures of the steps. Great work! This was one of my resolutions and I hardly cook anymore. Need to get on it again

This looks pretty good! I may have to try it - once it's cooled down a bit more (I hate using the oven in such heat!)
